Wow your fan is expensive!

What do you want to do exactly? If you just want to turn the fans on, you can insert the lead-out from the ac/dc to the fan. pin 1 is negative and center pin is positive. If you have extra solid core jumper/patch wire, you should use those so that the lead-out of the ac/dc won't accidentally touched.

Also, FYI, the reason why there is 3 wires on the fan is because the 3rd wire is a speed sensor which usually tells computer how fast they are spinning. Only 2 of the 3 wires are needed, and if you wire it backwards, the fan will just spin backwards so you will just need to reverse it.

And you could have gotten the fan much cheaper online, usually a few bucks depending on size. The same for the AC/DC adapter

You could have gotten CPU fans that are power by USB for half the price and then get either a surge protector with USB charger ports or AC Power Charger Adapter for each fan. I use those for my tanks. They work great because you can adjust the fan speed also.

This should run 8 of these fans right? I'm running 6

If they're all the same fan, yes based on the 800mAh pic above.
Not sure about that exact plug, but I just spliced into the wires and connected the fans and used some 22 gauge wire and electrical tape from radioshack to extend them to the desired location. If you want it more secure, add some sodder and soddering iron, or wire nut if you're lazy and sure it won't be near humidity.
